Christmas is OVER =-( and New Year's will be here in a couple of days!!

I can't believe how fast Christmas came and went!! We planned for months for the big day, only for it to pass us in record time! I have to say, this Christmas was AMAZING! It was Isabelle's first Christmas, and my mom wasn't in the hospital! Christmas Eve was spent here at home with my in-laws (Mike, Linda, and Michael). We had a Prime Rib for dinner, with baked potatoes, creamed corn, bread and champagne (I had Martinelli's Cranberry Apple Cider, which was soooo yummy!) After stuffing our faces, we went off to bed... awaiting Santa's arrival! Rise and shine, with Isabelle, we are usually up around 5:30am or 6am at the latest. Ryan and I decided to let Iz go down for her morning nap before waking the family and opening presents. Around 8:30am we gathered in the living room around the Christmas tree. Isabelle did her best at trying to open her gifts, but she was more interested in eating the paper, so I opened most of them for her =-) I have to say... she made out pretty well. We didn't go overboard this year, because her birthday is coming up, and she is still pretty young! Next year will be more fun for her since she will be almost two years old then. After we had our traditional breakfast of Egg's Benedict, we got ready to go to my moms for Christmas at her house. My moms house is always full of family during the holidays! This year consisted of the usual, my mom, Tom, Joan, Bubbie, Bobby, Cameron, baby Braydon, Valerie, Tristan, Jade, Kai, Auntie Debbie, Lindsay, and my Auntie Pam! Did I forget anyone?? When I say full house, I mean FULL house! It's the best part of the holidays though! All of us getting together! We also had Prime Rib that night =-) Super Yummy!!! All in all, it was a great holiday! We are looking forward to the New Year and all that is to come! I feel so blessed to have such an amazing family! I'm thankful that my mom wasn't in the hospital!! We have spent MANY holidays in the hospital, which is no fun. It doesn't bother me as much as it used to... We have to make the best of every situation!

For New Year's we are just going to be home. My friend gave me this really great idea of having a PJ/board game party. A few people might show up. We LOVE playing CRANIUM!! If you haven't played it, you have to try it out sometime! So it will be a a nice night at home... ringing in the NEW YEAR!!! I can't believe 2010 is only a few days away! Chocolate Shortbread Cookies

Yesterday I made Chocolate Shortbread Cookies. I got the recipe from the food network's Chef Alex Guarnaschelli. I watched her video before making them. It looked super easy and had very few ingredients. In the video she puts the dough on a sheet pan, so that's what I used. The funny thing was, my sheet pan was twice the size of hers (it must have been!). They came out tasty, but a little to thin, and a bit burnt on the edges. I'm going to try again today! I'm going to use the right size baking dish this time, and actually, I'm going to add a little more chocolate. Like I have said before, baking makes me a little nervous. I will only master it if I keep baking and trying new recipes. I'll follow up and let you all know how my next batch turns out =-)

P.S. I'm also going to bake Scones from Ina... and my moms world famous recipe for Banana Bread!! Mmmm

Hopefully this will get me into the holiday spirit! So far, it doesn't really feel like Christmas, and it is in Two days!

Christmas shopping and MONEY!!!

YAY!! Christmas is almost here (6 days to be exact)... I have finished my shopping for Isabelle. I went to Babies R' Us today for something like the fifth time. I was kind of torn on what to get her. She is only 10 months old and is just starting to get interested in toys. She has more fun exploring everything in the room. Any suggestions on gifts? We got her a few toys and some clothes. I figured we would wait until her 1st Birthday to get her something really great... it's only two months away. AAaaahhhh!!! I can't believe my baby girl is going to be a year old already!

We decided in my family this year, not to buy the adults presents. There are three new babies to buy for (on my moms side of the family) and we are all a little short on change. I feel bad because you want to give gifts and make others happy!! I guess right now, whats more important is the little one's. My sister had a baby boy in October. His name is Braydon and Oh soooo cute! Also, my cousin Nick & his fiance Amanda had a little boy this last July. Besides the Christmas gifts, I swear, everyone I know seems to have a birthday in December of right at the beginning. Birthdays can't be skipped.

So on top of all the shopping, me and Ryan registered for the next semester this month! I wont mention what we have to pay, and it's way less than if we were going to private schools, but it's still a rip! I'm taking History and an EMT class. I don't even know how much my books are going to cost! One semester, I took Anatomy & Physiology (a combined class) and Microbiology. Talk about a rip... My books alone cost me $600!!! And when you go to sell them back, they only give you half back.

Ok, I'm done venting. I love the holidays!! I really do! I just hate money! Why can't we all win the LOTTERY? ha lol

Wednesday December 16th 2009

The Month seems to be passing me by... and soon it will be The New Year!! My baby girl turned 10 months old on the 3rd of this month! I can't believe that in a few months, she will be a year old already!! We have been busy planning her first Christmas, and soon our planning will be all about her 1st Birthday! It's so crazy how time flys! Isabelle Has been walking for about two weeks now. She has two teeth on the bottom, and her two front teeth are coming in on the top! She also now has a two word vocabulary. She says CaCa (if that's how you spell it) and Book. I have no idea where she learned CaCa, but it sure is cute when she says it =-0 The Doctor seemed very impressed by her advances. He said she is very advanced for her age. I can only hope she continues to advance. I think every parent has the highest hopes for their children. I hope Isabelle is a better student than I was. I wasn't a bad student, but I would have done a whole lot better! I want her to enjoy school. Is that possible? Some kids do like school right? I didn't really care too much for academics. I was more interested in the social aspects. I guess I'm getting a little too far ahead of myself. I mean Isabelle is ONLY 10months old lol =-) She is just so stinkin cute...

So on another note, I made beef stew the other day. I was soooo nervous because I had never made it before. I followed a recipe from Paula Dean. I had this horrible feeling the meat wasn't going to come out right. I thought it was going to be tough, but to my surprise, the meat was yummy and VERY tender!! I shouldn't doubt myself! I think I am a pretty good cook, and I do great when following a recipe. The stew came out good, but next time I think I'm going to add a few fresh herbs to it. It seemed to lack a little flavor. What I really want to do is learn how to bake. I want to feel as confident baking as I do cooking. For some reason it really intimidates me! I made scones a few weeks ago for the first time. I was nervous because I've heard they can come out hard as rocks if you mix the dough too much. Once again, to my surprise, they came out great! The looked horrible though. I wasn't sure how to work the dough when shaping them. I know with practise, I will master the art of making scones! Maybe I will take a baking class at the community college. I think if I learn the techniques, I will be a lot more comfortable with baking. Now all I have to figure out is, what to make for dinner tonight...

My mom is in the hospital again. Her right arm is very swollen which is extremely painful!!! Last week she went in for an IV procedure. The Doctors have had a hard time starting an IV, so they scheduled to try for one in surgery. They were not successful, and the result for her was a swollen arm. She needs to have a permanent IV put in, so she can do TPN treatments at home. She used to do them at home, for many, many years. My mom is the strongest person I know!! Her poor body and soul has been through so much! I don't know whats going to happen if they can't get an IV. The doctors said something about putting a line into her liver. What ever they have to do, is what ever they have to do, but there is a risk when you mess with organs. She went into UCLA medical center yesterday. They have been giving her heparin for her blood clots, and the swelling has seemed to go down a little bit in her arm. I pray to GOD that she will be home in time for Christmas! She was in the hospital for Thanksgiving. Please put in a prayer for my mom!

Another Monday

So Monday has begun... The only difference today is, I have the most horrible headache! Isabelle is down for her morning nap, and I'm finally eating breakfast. I can't decide if I want to shower when I'm done eating, or If I should wait until Isabelle goes down for her afternoon nap. I have a few errands to run today, so maybe I should shower this morning. =-) I have to go get my car smogged (Oh what fun!!). My car registration is due today (another fun subject- going to the DMV). I also have to go buy stamps. For some strange reason, I ALWAYS forget to buy stamps. I think maybe because I pay all of my bills online now. I need to mail our Thank You cards from Isabelle's Baptism... which was October 4th. OOPS! I hope people know how Thankful we are, even if the notes are a little late! I actually don't like buying Invitations or thank you cards. I feel like they are a waste of money. People usually just throw them away. I feel it is important to Thank people, but there should be another way. Maybe I will start to write a personal letter of thanks. Instead of going out and buying Thank You cards. For Invitations I usually use a picture and make Picture Invitations. That way I know they wont get thrown away. Speaking of pictures, we are going to take our Family Xmas pictures this Saturday! I can't wait! Isabelle's dress is adorable, and we don't have a family picture yet. I'm so excited for this holiday season! It's going to be even more special because this is Isabelle's first Xmas. The only thing that I don't like is, the holiday season always comes and goes way too fast! I'm looking forward to baking more this year! I think I'm going to give out baked goods as gifts. They will be super yummy (hopefully) and It wont cost much. Me and one of my best friends Vanessa made blueberry scones the other day. They turned out great, but looked kinda funny. I need to work on the presentation.

Oh I just remembered, I need to finish my Lab work for my Chemistry class. I'm seriously counting the days until this semester is over!! I hate this class with a passion! My professor is so lame. Her personality is dry and she isn't a very good teacher. Worst of all, she wastes so much of our time! I just want to get in and get out. I have three more weeks left and then my final. She is even having class on Wednesday before Thanksgiving... I mean, who does that? Some professors are out there just to make our lives miserable. Ok, I'm done venting.

re-cap of this last week...

Boy oh boy have we been busy! Last Sunday we took Isabelle to Disneyland! We have season passes so we are going to try to go as much as possible. It's nice having them because we don't feel rushed to get on every ride. We took Isabelle on Snow White, Pinocchio, and Small World. Then while the grandparents rested with Iz, Ryan and I jumped on Pirates of the Caribbean. You can't go to Disneyland and not go on Pirates!! Other than those few rides, we got our pictures taken with Goofy and Minnie Mouse! I'm so excited for the years to come, and the joy our kids will experience at Disneyland!

The rest of the week has been crazy! This was my last week of summer school. Last night I took my Philosophy final and tomorrow I finish my Health class. You'd think that in summer school the professors would be laid back on the work load... yeah right! What was I thinking! At least I've made it through, and I'm that much closer to finishing. It's too bad the Fall semester starts this coming Monday! Yep... No break. I'm so close to finishing though! I can't give up now! In the fall semester I will be taking Chemistry (again... and I better get at least a B. This new professor should be a lot easier) and a Math class for Elementary School teachers. Hopefully it wont be too much of a work load.

I haven't cooked much this week because of school and stuff. I did make a big batch of Chichen noodle soup. Which I have to say, turned out amazing! I got a recipe from the, but I added a few ingredients to make it my own. The great thing about making soup is you can freeze half of the batch and use it another day! You know those days we DON'T feel like cooking! Well it's dinner already made and ready to eat. Heat and Serve! Today I'm making split pea soup at my husbands request. It's super easy, hearty, and oh so yummy!

Today is my mother in-laws birthday! Happy Birthday Linda!! We're going out to dinner tonight, but I'm not sure where yet.

This weekend should be nice. At the moment I can't remember what we're doing tomorrow. It seems like we have plans, but it's slipped my mind. hhmmm... I hate when this happens. Thank GOD for day planners =-) Sunday I'm supposed to get together with a friend from High School! I have seen her once in 10 years so I'm excited to reconnect. I feel like I'm getting a sinus infection though! Hopefully with lots of fluids and maybe some rest this weekend, It will pass.

I love Fridays!! I don't have class for the rest of the week, and I get to see my husband more! Don't get me wrong, I still have a ton of things to do. I need to clean the house (which gets neglected during the week), do some homework, make a yummy dinner (new recipe), and somewhere in the day I'd like to take Isabelle to the pool.

Isabelle loves the water! She loves the pool, and she loves, loves, loves bath time. I still use the baby bath, but I want to get her a seat for the bath tub. She's almost sitting up like a big girl, so I think in the next few weeks she will be ready! We took her to the beach the other day... Didn't take her in California dirty water, but she loved the waves! I knew that going to the beach with a baby was going to be a little bit harder than just the two of us. Oh boy was I right! We had to take so much extra stuff... next time we have to take at least two extra people with us! I carried Isabelle, the diaper bag, and a blanket. Ryan carried two chair, the umbrella, and the ice chest. Poor guy! We both got a workout for sure! It was totally worth it though! So... anyone want to go to the beach? lol

Tonight I'm going to make Chicken Boudine by Paula Deen. I'm excited!! It sounds super yummy, and seems easy to make! I LOVE food!! I really want to make cheezy corn bread, but I don't think it will pair well with the Chichen Boudine. I'll have to save the corn bread for another night.

Thursday August 13th 2009

Good Morning everyone! Last night felt like a never ending night. Isabelle went to sleep around 6:30pm. WOW right! Well she was awake at 8pm and then again at 11:30pm. She finally went back down around 1am. Needless to say, I'm so tired! It didn't help that our baby monitor was malfunctioning! It was kind of scary. I watched Ghost Hunters last night, so I kept thinking that a ghost was messing with the monitor lol. Funny now but scary last night! Then I had a bad dream about ghosts. There were two of them in our house. One was a teenage girl by our stairs, and the other was a man. The mind works in mysterious ways! I don't usually get scared of ghosts from the show I watch, but maybe all of that is changing... I don't like the white noise of the baby monitor! It will be nice when we don't have to use it anymore. How long do people usually use baby monitors by the way? Until they are out of the house lol =-)

I have class tonight and I'm so not looking forward to it! I really thought I was going to love Philosophy. This class isn't really Philosophy though, it's focus is on critical reasoning. I love to think things through and analyze stuff in my life, but I never realized how crazy some people can be. We seriously spend two hours of class on people arguing about stupid sentences. For example... Puff is black. All cats are black. So, Puff is a cat. I mean come on people! What is there to argue about! One more week. That's my motivation!

Next semester (which starts August 24th) will be more interesting. I'm taking Chemistry again, and a Math class on theories for teaching Elementary School. Once the Chemistry is complete, I can apply for the Nursing program!!

Do you guys watch the Noggin channel? Most of the shows are really cute, but Yo Gabba Gabba is a little strange!

Dinner and then Bed

So Isabelle is sleeping now. She didn't get a good nap from all of the action with the prunes... poor girl! She is usually alseep before 8pm. She's a great sleeper! She usually doesn't get up until 5am or so. After a bottle, she goes back to sleep for about two hours.

My Birthday dinner for my husband was a success! The "mama's lasagna" from the Neelys is soooo yummy! We shaired a bottle of wine and now it's time for Ghost Hunters! We look forward to Wednesdays! It's kind of like a mini date night. After Izzy goes to sleep, we eat a yummy homemade dinner (we take turns) and watch Ghost Hunters on SyFy. Why did they change their logo to SyFy?? I don't like it, but thats just my personal opinion.

Ok well good night world... Thanks for a great first day of blogging =-) See you in the morning

Note to self...

Dont feed Isabelle prunes, unless she hasn't pooped in a few days! I just changed the most explosive diaper! I should have known lol...

I should be doing homework right now for my summer classes. I feel like this summer has flown by without me. I live in Sunny California, yet I've only gone to the beach once =-( I was taking a 5 week Chemistry class. What was I thinking? Way too much information in such a short period of time! I'm going to retake it in the Fall semester. Now I'm taking a Health class and a Philosophy class. The Health class is super easy, but time consuming! The Philosophy class is lame. It's not Philo 101... it's a critical reasoning class. It focuses on breaking down sentences and arguments. Next week is my last week, thank GOD.

My sweet baby girl is sleeping at the moment. I have to decide what to do first... Do I eat something, throw in a load of laundry, homework, or maybe take a little cat nap? Ok, I'm going to eat some left-overs from last nights dinner, and then I'm going to get started on my homework. When does the shower fit in here? Maybe during the next nap session. I need to go to the grocery store also.

So today is my husbands birthday!! He's 28 today. Yes ladies, I am older than him. Not by much however... 10 months I think =-) Well I'm going to make lasagna for dinner. He found the recipe on It's from the Neely's collection. We love the Food Network, and we love cooking together. Sometimes we print out recipes, and sometimes we create our own. I haven't explored baking yet. I mean I've made carrot cake a few times from scratch (my moms recipe and super yummy), and cookies here and there, but never really experimented. I'd like to explore the world of chocolate and all the things it can be used for.

I'll have to come back to this blog in a little while. Only about an hour left that my daughter will be sleeping =-)
